– LES VIANDES –
LA QUALITÉ DE NOS COUPES
 

La viande : de jeunes bouvillons nourris au pâturage au milieu de la plaine de la pampa et bien sûr par la maîtrise du maniement des braises.

Jeunes bouvillons de la race Aberdeen Angus, élevés en liberté au milieu de la pampa, nourris à l’herbe. Ce sont des troupes sélectionnées par un éleveur expert avec une grande expérience.

Le produit arrive à Madrid réfrigéré par avion. Les coupes sont affinées pendant 40 jours à température et hygrométrie contrôlées.

Notre excellence réside dans les techniques de cuisson développées par le style unique de notre maître du feu Javier Brichetto, qui utilise trois types de combustibles, bois de chêne, chêne blanc et charbon de quebracho argentin, des ustensiles conçus en fer forgé pour préparer chaque ingrédient.

Chez Piantao, un restaurant argentin à Madrid, nous avons la meilleure sélection de viande argentine, de jeunes bouvillons de la race Aberdeen Angus, élevés en liberté, nourris à l’herbe verte de la plaine la plus fertile et la plus étendue au monde de la pampa argentine.

Notre excellence réside dans la viande grillée exposée où nous appliquons différents modes de cuisson : grillée au four en fer forgé, ou à la rôtisserie, où de grosses pièces de viande défileront.

Javier Brichetto a commencé sa carrière professionnelle avec 16
ans dans son pays natal, l’Argentine. passionné de cuisine,
il a toujours été clair que son avenir professionnel était à côté de lui
des poêles.
Après plus de 14 ans à Madrid, il a été reconnu avec
d’innombrables prix, parmi lesquels il convient de mentionner le
célèbre programme de télévision Cocineros al Volante, dans le
qui ont concouru avec d’autres stars du monde de la cuisine et
dont il était le vainqueur.

Nice place, very calm ambience, they serve a very good meat. A gorgeous woman with a nice uniform like working in a five star hotel is going to serve at your table. But the chicken in the menu says 1/2 grilled Chicken for - 23€ but i will tell you it's not half piece cut of chicken its only 1/4 of... the leg part of their chicken. For 3 dishes and drinks we paid for the total of 70€. A little bit expensive for a small portion of meat and a small servings of food but their meat and chicken was so tender and taste better compare to others. Maybe the kind of their meat is what that it makes their menu expensive. A must try but if you only got a minimum wage per month this is one of the Restaurants that is expensive. It's a nice try. Their bathroom are perfectly clean. Everything is perfect just be aware of their price.read more

Great place, staff and meat. It is not the most traditional argentinean place. They innovate quite a bit and that makes it much more interesting. The smoked butter was really surprising and the grill guy uses very special wood to grill the meat. Very tasty and will come back.

Excellent food. Argentinian theme. Superior service. Gandalo did a great job of recommending food and drinks were amazing. The restaurant was clean and modern. We only scratched the surface of the menu and wish we had more time to explore all that Piantao had to offer.

Exquisite flavor, the steak and chorizo were the best of our dinner. The design of the restaurant is also on point. If I was to critique one thing is just the portions, they were a bit small for the price, nonetheless it was all worthy.

Good place in a less known area of Madrid. It's near Matadero (which is where meat used to be butchered and packed) so you expect exceptional food from an Argentinian meat restaurant.That wasn't the case however. It was good. Their appetizers were good classic Argentinian. The meat was good but... none of us were wowed. It's also not cheap so I guess we were expecting more.read more

First time here and the food was really good.I tried the Argentinian meat and it was incredible.It was a privilege to be one of the first people that tried the fish cooked in a cage. Very recommendThe selection of wine is good and the deserts are yummy.Very friendly workers 😉

Great unassuming place from the outside right by the Legazpi metro. It’s very nice inside with great attention to detail. Loved all the homemade breads with the smoked butter. Really good lamb sausage, steak and especially the sugar roasted sweet potatoes and corn tamale! Let us not forget the bomb... of a dessert the alfajor+dulce de leche helado. Amazing.read more

AMAZING PLACE !! From the start, all the proper safety measures, the greeting from the host was extremely warm. The amazing experience with the food started just with the bread, all were tasty and just perfect, and the smoked butter is the perfect compliment. Don’t get me started with the meat and... the chorizos they were spectacular and perfectly cooked. Like in every place a good meat doesn’t need a side dish. The dessert are also amazing, nothing bad to say about this place will definetly go back !!read more

Most of the food was very good, but it is definitely on the pricey side. The service leaves a lot to be desired, and you can especially see this in the recommendations by the waitress who was pushing us to over-order drastically, such as telling us to order one empanada per person when we were... getting a variety of starters to share, or telling us what we were ordering wasn't enough when it would have been plenty. I also feel that when you are paying €20 for a piece of meat it should come at least with some side or garnish and there is definitely room for improvement. Could do with more variety in the menu.read more
